Regionality on a Plate

Kitchen Cultivars, a collaborative project between Seedshed and Glynwood, unites regional farmers and restaurateurs in the protection, promotion, and proliferation of regionally adapted varieties.

"From local farms to local restaurants, Kitchen Cultivars revives regional cultivars and gets them where they should be: on plates in the communities where they originated."

STEP 1

Seedshed identifies and trials uncommon varieties that are historically or genetically significant to the Hudson Valley region.

STEP 2

Seed is produced and given to local farmers.

STEP 3

Local farmers growing 'Kitchen Cultivars' are paired with chefs who will purchase and use these unique varieties in their restaurants.

STEP 4

Participating restaurants are promoted through special events, dinners, and featured menus so that the local community can experience a truly local meal from seed to plate.
